May 14, 2008 - I give restaurants three chances.  Then wait 6 months and hope it improves.  I want to like Quinn's.  I WANT TO LOVE QUINNS.  It's freakin' cute and so close.  It has the potential to be so much better than it actually is.  
Here's what happened.
The First time I ordered the hanger steak, my boyfriend ordered the tuna and we shared a few other munchies on the menu at the time.  To put it simple:  my steak was cold and the tuna was over cooked and hot.  HOT TUNA???  We all know that is no good.
Second time we went to sit at the bar around midnight, to get whiskey cocktails and split a burger.  The burger and fries were good and a perfect split for the two of us, but when we asked for the check, we realized that we hadn't been charged the price of our well cocktails:  whiskey ginger and whiskey coke.  Our drinks were more than prices we had paid the previous time.  I asked the bartender if they had changed prices (no biggie, just curious) and he very rudely responds by saying, "I served you Maker's because that's the whiskey I like better, and it's the well whiskey at the W". Then he turns around and grabs $3 out of the register and says, "Here's the difference" and throws the money on the bar!  WHAT THE HECK!?  Ok.  I DON'T WANT YOUR THREE DOLLARS!  I just wanted your well JIM BEAM whiskey.  Jim Beam is fine with me.
Third time we went back and because the burger was good we decided to get them again.  (BIG GOURMET BURGER FAN).  My boyfriend orders his medium-rare and I get mine medium.  When they come out, I cut mine in half to notice that there is literally raw cow flesh falling out of my burger.  It isn't even rare; it's just about raw.  The server was really nice about it and of course took it off the bill and said that she hoped we'd come back again.
I'll go back in 6 months and hope that it's better.
I don't know if it's bad management and leadership running the restaurant or what.   I've met the chef and he seems amazing and like he has a clear vision of what this place should be... but somewhere between him and his people, there is a lot getting lost in translation.

April 20, 2008 - I took too long to get to Quinn's for the first time - last night - but found absolute proof that it's better late than never.  Creative cuisine, great beers, eclectic wine selection, serious whiskies, and outstanding service.  I worked closely with the late Michael Jackson (the English beer writer, not the gloved one) for 6 years as director of his U.S. beer clubs, and only regret that he won't be visiting Seattle to see me again - because we would have enjoyed a Quinn's trip together.  Glad to see someone taking this concept as seriously as they do there - a must try.  Cheers.

March 19, 2008 - Hands down the smoked hanger steak with Romesco, Spanish blue cheese and frites is the best thing on Capital Hill.  Keep at Quinn's and you'll give Capital Hill restaurants a run for their money.  Thank God there's finally a good place to eat on the hill.

March 18, 2008 - Quinn's just opened for lunch, so we have a deadly triangle of Quinn's, Presse, and Boom Noodle for our yummy $15 lunch needs.  
I've only been there twice, and have had excellent food both times, but the single reason that I like Quinn's is that they have roasted cauliflower.  Which is only the best vegetable in the entire world that until now I've only had at home and never at a restaurant.

March 11, 2008 - A friend had recommended Quinn so we checked it out of these pages and went to their website.
Too bad their website says they are open for lunch because they are not!
Over a 2.5 mile walk from our hotel until to find they are not open for lunch.
Even though the painted sign on the door and the website says open 11:30 am to 3:00 pm.
So can't comment on the food just the frustration of the experience.

January 18, 2008 - had my birthday gathering here a week after they opened.  loved the atmosphere, loved all the food.  the upstairs communal table/group area was a little tight for our group of 15, but it made the experience all the more intimate.  service was wonderfully attentive as well.
