February 23, 2010 - Doesn't like it - 4 foodies who made reservations months in advance and were SO excited were disappointed within the first 10 minutes by the service. Rushing us through dinner at a 9pm sitting? We continually told our waiter that we wanted to wait to order our entrees until we had a glass of wine and our appetizers. He came back at least 3 times and then sent another server over with an open notepad ready to write it down. Not to mention it took 25 minutes to get bread to our table (when the people seated next to us received it right away) and at least 40 minutes to get our cheese plate which was smacked down by a "dishwasher" with no explanation of the cheeses. When we asked our waiter what the cheeses were, he gave us a completely inaccurate description of the cheeses and didn't even know what one of them was. The entrees were decent, but nothing to write home about. Scallops were cooked well but a bit over seasoned and were swimming for their lives in butter, Hawaiian sea bass was a bit overcooked, mussels were good but fries were comparable to that of a mid-range steak house. My suggestion...go to Sushi Ra across the street during Happy Hour and save a masses of money. Fresh sushi, cheap drinks and a fun, knowledgeable waitstaff...and it's a chain.

February 02, 2010 - Really likes it - I will dearly miss Daniel Boulud Brasserie when it closes at Wynn in April. But until it closes for good, RUN (don't walk!) and try the food here at least one more time!
I took my dad here to make a believer out of him. He was skeptical at first, as he's not really one for French food. However, I think I was finally successful tonight!
He really enjoyed everything from the salad to the Sonoma Chicken with winter veggies to the passion fruit sorbet. In fact, he declared this to be his new favorite Las Vegas restaurant!
Meanwhile, I loved the cheese plate. These very special cheeses were paired beautifully with fruit jellies and breads.
And the DB Flatbread? Drop dead delicious! The caramelized onions and the chevre were paired together so delectably here!
Oh, and how could I ever forget that chocolate souffle? I felt like I died and ascended to Chocoholic Heaven, if only for a few minutes! The strong chocolate flavor of the souffle was so enticing, and the texture was really just right. The parsnip creme anglaise was just the perfect topping here.
So again, please make sure to try Daniel Boulud Brasserie at least one more time before its scheduled April closing. This will be a horrible loss for Wynn and The North Strip, but at least we can savor and enjoy these last few weeks with this wonderful restaurant on The Lake of Dreams.

January 18, 2010 - Really likes it - A shame that it is not open for lunch. The onion soup with beef shank is not something to share - we tried and within seconds of tasting it we had the waiter headed back to the kitchen for another. The real stand out for me are the cheeses. I highly recommend getting Kirk to recommend cheeses to your taste, choose a reasonably priced Bordeaux and maybe a salad and I guarantee a full body smile!

October 18, 2009 - Doesn't like it - I'm sorry to say, but the best part of our recent dinner was sitting lakeside and enjoying the every half hour show. My frisee salad was over-dressed with a mustard vinaigrette and the poached egg was over cooked. I tried the "famous" DB burger--ground sirloin stuffed with braised short ribs and foie gras--the short rib meat was dry and if there was foie gras in there, I couldn't taste it. My husband's duck terrine was bland and his steak frites was tough and boring (the typical hanger steak used in this dish should be flavorful). But at least the frites were well done. It also didn't help that our waiter, after we had declined a before dinner cocktail, walked away with the wine list without even asking...and that was what we had planned on ordering. We had to ask one of the managers/expediters for the wine list. We don't plan on giving it a second chance.

July 19, 2009 - Really likes it - This brasserie is simply charming. The location along the lake of dreams is perfect for a romantic dinner. And the food? Simply delicious, from the onion soup to the flatbreads to the souffle (order one for dessert for the real wow factor!).
Chef Wesley Holton does a terrific job of reinterpreting Daniel Boulud's best dishes for Wynn, and I look forward to going back soon!

May 28, 2009 - Doesn't like it - I have great affinity for Daniel Boulud. His career alone was enough for me to choose to eat here. The food did not disappoint. It was prepared perfectly, no complaints about portions, or timing, or the wait-staff who were all attentive but not overbearing. If was only for the food, I would have selected "liked it", sadly the over-the-top BLARING of music and the Wynn's waterfall laser/light show killed the evening for us. And sadly I was looking forward to dining here for just that reason, dinner and "a show' of sorts. My husband and I sat next to each other which was a delight and the only way we could communicate was to lean over and yell into each others ears, yes Virginia, it was that loud. I know that all the top chef's are making their way in Las Vegas the city of extremes, but this is one extreme that needs help.

April 20, 2009 - Likes it - During my stay at the Wynn, I also tried Daniel Boulud. I found the food and service to be excellent. I had onion soup, yellowfin tuna, and ended with a cheese plate. The meal was timed perfectly.
Our waiter was quite attentive and cool, despite dealing with a boorish crowd of men the next table over who were arguing up and down over the size of their wine pour.

April 10, 2009 - Really likes it - I've heard terrific things about Daniel Boulud's infamous brasserie, even up to "the best meal I've ever had the pleasure of enjoying," but I never suspected that this statement would also apply to me. I had dinner at Daniel Boulud on a Friday night with 6:00 reservations as sort of a last minute idea. When I arrived at the restaurant, the staff was immediately ready to accomodate both me and my friend. We were given prime location, a front table overloking the water. After looking over the menu, my friend decided on the Pink Salmon, while I was ready to treat myself to the Escargot and the Double Beef (filet and short rib). The escargot came shortly after, fresh and delicious. The flavor filled my mouth with every bite that I took; they were probably the best I have ever had. Next was the main course. My friend's pink salmon was not at all dry and simply delectable. But, it was not until I sank my teeth into my own helping of caviar that I was hooked. This complemented my filet, also cooked to perfection with a nice hint of imported seasoning. The braised short rib was filled with flavor and also cut like butter. All this, with a gorgeous view. I will certainly be back many times in the future. Now I can truly say that this was the best that I have ever had. Literally. The Michelin Guide should be proud of this one; however, I think it deserved at least 2 Michelin stars.

"Less than spectacular burger, less than spectacular service..." by Nathan (11 reviews)
April 08, 2009 - Doesn't like it - I am not a fan of French food in general. However, I had to try the famous NY DB Burger of sirloin stuffed with braised short ribs, black truffle, and foie gras sandwiched in between a parmesan bun and served with fries. The good news? The fries were tasty. The bad news? 32 bucks for a burger when you can't taste 75% of the advertised ingredients. I could taste the sirloin, and I could taste the horseradish in the mustard, and that's about it. We had dessert, but it wasn't anything special (Black and White Napolean).
My wife and I had thought about using one of DB's party rooms for our wedding reception last year. If the cuisine and the service especially were any indication this past weekend of what it would've been like, we are SO glad we didn't have the reception here. Our server was not very friendly, nor did our server ask the normal, specific questions one would ask during a customer's meal (i.e. asking if we'd like to see a dessert menu after dinner instead of just showing up, not saying anything, and handing us menus). It was a Sunday night, and they weren't exactly swamped...
We had a table on the patio underneath a heat lamp, so we could watch the "shows" in the Lake of Dreams which were less than bearable. The interior design is great. The patio seating is amazing. The water "shows" are lame, the service sub par, the burger was a disappointment...
At least we can cross this off our list of restaurants we want to try...

April 08, 2009 - Doesn't like it - 9-oz. sirloin burger stuffed with braised short ribs, foie gras and black truffle, parmesan bun and fries.
After seeing all the hype about Daniel Boulud's burger on TV over the past few years I was very excited to get the chance to try it. Sadly it wasn't worth the wait nor the $32.
I'm a huge fan of foie gras and black truffle but the flavors just didn't exist, just the melted foie gras dripping down your hand as you try to eat the soft ball sized burger. Otherwise the texture was of a dry over cooked burger, I ordered mine medium rare, and all that I could taste was the braised short rib and horseradish that is used in the mustard. But the fries were good, crispy on the outside and fluffy on the inside. 3 of us ordered the burger and came to the same conclusions, my wife had the sea bass which was OK, not great just OK, and the deserts were forgettable, mainly since I forgot what we had.
The service for our table of 4 was also disappointing. We ate on Sunday night, which shouldn't make a difference in Las Vegas, but we received cold and inattentive service from everyone. We were able to sit outside by the water and enjoy the show which seemed like it was having problems of its own. Not a big deal we still enjoyed it, but it repeated the same segment several times in a row but without the music.
I don't like to write negative reviews but I thought this may help some people who, like me, were anxious to try the famous DB burger. It may have been an off night; I'll just have to wait to try the burger in NY.

"A disappointment" by Brad Bart (1 review)
February 18, 2009 - Let me tell you our tale of heartache from this past weekend.
We took in the dinner & show package at Wynn which included a 3-course prix-fixe menu from one of their 4 multi-star restaurants.  We went through the menus in their supplied guidebook and chose Brasserie, sporting the name of the famous Daniel Boulud.  $75pp, tax and grat were included, but no wine.
OK.. so we get seated in front of the Wynn's waterfall of dreams, and all is very chic.  They drop the menu in front of us and boom.. it's a different menu than the one in the guidebook.  Instead of steak frites and pork loins, there was coq au vin, and two other options: one hinting at a small dusting of fish and the other with no meat at all.  [Worst was the asterisked line at the bottom of the menu saying *Vegetarian option available upon request.  Weird, considering this looked like the veggie menu.  Oops.]  Anyways, the manager came out to speak with us and to explain that the menus are always changing [by season] and never consistent, but she allowed us the steak frites anyways.  OK.
Oh, I forgot to mention my dirty fork.  Not a big deal.. it happens to the best dishwashers.. so I told a waitperson.  They took it, but no replacement fork arrived before the salad.  When I asked for a fork, they brought me one immediately (good!), but that fork was dirty too (bad).
The salad (winter salad) was good.  Not super, but good, standard fare for a restaurant of this level.
Now.. about the steak.  I like my steak medium rare and my fiance likes it rare.  I also like to have a meaty glass of red with my steak.  Try to order wine by the glass here and prepare for a rude shock.  Minimum for the cheap crap is $12/gls.  I wanted a bordeaux style, so it was $20/gls.  So, tag another $50 onto this dining experience.
The steak comes, and while my fiance's is perfect, mine is more medium than medium rare.  The dryness is tough to handle, especially since the wine didn't come with the meal like we asked.  When it comes, it is the most pathetic 4 oz pour I have seen.  What a rip.  Already late and time-constrained by the show, we leave about 1/4 of the steak on the plate to rush thru dessert.
Dessert was excellent: a pistachio cake topped with fresh raspberries and some chocolate shavings.  Raspberry sauce.  Mmmmmm..
So, basically, we spent $200 for a super cake, a good salad, an overcooked steak, a botched menu, two dirty forks, two glasses of overpriced wine, and a lot of pretentiousness.  You might think I'm petty for any one of these complaints, but put together it leads to a pretty marginal dining experience.
Sorry Danny, but you earn the 1-star review this time.
